The first thing that struck me when I walked in was the sheer size of the cocktail bar and the natural light beaming through the large windows. Speaking of the Angus Beef Slider was a great way to start the afternoon. I particularly loved the addition of the smoked Scamorza cheese, pickled cucumber and Dijon; extra points for the TWR branding on the top of the bun. The lobster spring roll followed, and the Nam Jim Mayo was the perfect accompaniment to the decadent and light savoury. I finished up the savouries on the bottom tier with the truffle, forest mushroom and aged cheddar croquette. Dipped in aioli, the flavours were simply amazing, making it hands down my favourite savoury of the day. Time to jump to the top tier where the palette cleansing sweets resided. I started with the tall glass which featured layers of Raspberry Cremeux, a tart yuzu crunch, finished off with freeze dried mandarin and strawberry jelly, a-mazing!
