Fennel, sweet corn, and bell pepper crumble with preserved tomatoes is the perfect brunch dish!

I have always loved trying out new recipes. Cooking is so much like an amalgamation of science and art. I have bought a few cookbooks recently. One such recipe, that looked quite interesting was the Crumbed fennel fritters. I have tried all sorts of fritters, but this was something I had never tried, and the recipe looked really simple, and delicious. I had all the ingredients for this recipe , except for eggs, and the original recipe called for eggs- both in the fritters, and in the dip. The method to make the dip with egg is explained below and in my recipe notes as well.

Fennel chilli crumb

Heat half the oil in a large frying pan over medium heat. Add fennel, season with salt and cook, turning occasionally, until tender and starting to colour mins. Add sugar, half the lemon juice and butter; cook, stirring occasionally, until golden and caramelized mins. Bring a large saucepan of salted water to the boil. Cook fettuccini until al dente mins. Drain, reserving 1 cup cooking water. For chilli crumbs, combine breadcrumbs and oil in a frying pan over medium high heat; stir until crisp 2 min. Add lemon zest, season to taste and set aside. Wipe out pan and return to high heat. Toss squid in remaining oil. Add squid and cook until slightly golden and just cooked through 3 mins. Add cooked pasta to fennel with reserved water and lemon juice; toss to coat. Sever topped with squid, arugula, tarragon and chilli crumbs. Skip to content.

As with many recipes in this highly instructive book, this gratin is more labor intensive than what you may expect — coarse bread crumbs are toasted and shattered just so — but every component is key to the final dish.
