I know I tried to down a gryphon before with 20 arrows months back and it did not work. I have dododex but I'm always told don't go by dododex cause it's inaccurate when it comes to narcotics and tranqs. Dododex is good for info on taming things. For checking stats I use Smart Breeder. For griffins I highly recommend a longneck rifle and tranq darts. They do take quite a bit to knock out. Crossbows and tranq arrows can kill many things easily. I would find someone with atleast a mastercraft longneck and that will have you set to tame most anything. The stats for the weapons mentioned are for primitive versions btw.
