Walking in to the resort, the first thing I spot is the open sea boasting a little surf, unusual for a man-made beach. We are ushered to the terrace, which is busier than inside to pick a table. On that note, we have one vegan amongst our trio who does manage to eat well, but the choice is very limited. The HK hot chicken wings are sensational, with the spiciness enhanced by a gorgeous blue cheese dressing, which is so deliciously moreish, I leave some aside for my main. You do need to order sides to beef this up, excuse the pun. Mr S enjoys his well-seared and not overcooked salmon fillet with a crisped skin.

The decor inside looks very similar to the TV set and the tables all overlook the open kitchen. There is a beautiful outdoor terrace that has views of the pool and the resort. As we are still lucky with the weather, we decided to sit outdoors and enjoy the quiet and calm setting. We began with chicken liver parfait with grape apple chutney that we layered onto the brioche and quickly tucked down. The second starter was poached lobster on a bed of the most creamy and luscious risotto. This has to be the best risotto we have had in a long time! The burrata and heirloom tomato salad with roasted beets and truffle cream and honey mustard dressing was a refreshing and beautifully presented plate. In the mains we picked the halibut that was placed on braised oxtail with a side of gem lettuce, wild mushrooms and pearl onions. Between the perfectly cooked fish and the melt-in-the-mouth meat, this combination was a winner.
