Besides pancakes there are waffles with equally scrumptious toppings and gourmet breakfasts like Sujak Sensation spicy sujak sausage with scrambled eggs, crumbled feta, Kalamata olives and pesto on Turkish or Haloumi Bruschetta diced tomatoess and red onions, basil, poached eggs, haloumi and house made pesto on ciabatta. Sweet tooths can devour dessert pizzas such as Nutella Madness or White Heaven — white chocolate base topped with chocolate flakes and Lindt chocolates. Mi Casa, Tu Casa… It was a warm December night, just a few days before the opening of a still-unnamed hotel, when thirteen turtles, guided by some far-off memory of home, began to find their way back to Holbox. At the end of the day, home is where our family is, and Casa las Tortugas is a big, embracing family. Holbox is a vibrant island suspended in time. It is a place with a fascinating history, a cornucopia painted in shades of blue, with calm and fascinating qualities, filled with beaches and uncountable palm trees. As time went on, the island began to draw in like-minded people that soon became like a family, helping to build the hotel with their ideas and hard work. They were visionaries, explorers, and would ultimately become friends.
