One could certainly say that I have a love affair with certain Brooklyn baking establishments see here , here , and here , so I was immediately intrigued. With a trip to New York looming last month , I decided that I would visit the bakery before buying the book, because I felt that it would be more fun to be surprised in person. My very first stop on the trip was to the quiet Brooklyn neighborhood of Greenpoint on a rainy October morning. I hemmed and hawed over what pastries to get ultimately choosing a number of delicious items , but the one thing I zeroed in on right away was the Brooklyn Blackout Cake, displayed prominently on a countertop cake stand. I knew right away what gives it such an unusual hue, and it happens to be one of my all-time favorite and sadly under-utilized ingredients, black cocoa powder.

In the next two years, founders Erin Patinkin and Agatha Kulaga plan to put their bakery on the fast track for an expansion — starting with a brand new test kitchen in Greenpoint, a new location in Park Slope, and eventually more than a dozen locations in New York alone. Patinkin and Kulaga started Ovenly more than six years ago in Brooklyn as a wholesale bakery business. Their pastries can also be found at some coffee shops, hotels, and restaurants around New York, wholesale business that makes up 70 percent of their sales. Patinkin and Kulaga are hoping that will change with a new network of neighborhood cafes. It starts with expansion in Brooklyn. Just a block away from their original cafe and production facility, the new space at Franklin St. Other times, it will host special events or pop-ups, including a monthly chef residency and classes.
