Andrea is the longest standing member of our Slurp community, and head chef since He brings together mountains of experience from all over the world - Italy to Japan, something he allows to manifest in the dishes he creates. The Nduja Miso at Kona is his most recent creation, a ramen that speaks to the internationality of himself, of Italy and Denmark, and of food itself. But he is not only about food, he is also the good soul of Slurp — the glue that makes new and old team members feel welcome, the guy with the biggest smile, the one with the greatest passion to never stop growing, always inspired to do things differently. It all started some time ago when our co-founder and OG chef Philipp Inreiter left his Noma days behind him to travel Japan. After a passionate, strong, and hot love affair with ramen, he decided that Copenhagen was in serious need of this food — intense broth, delicious noodles, and rich toppings that speak right to your soul and deliver some urgent warmth amidst the Danish weather. Things have changed by then, but only for the better — the queue got longer, the team bigger, and the menu greater. But what has not changed are our roots.

We all know noodles are a staple of Japanese cuisine. There are a variety of noodles that each have their own unique flavor, taste, and style. However, such delicious noodle dishes also share many things in common. Whether it is ramen Chinese-style wheat noodles , udon wheat flour noodles , or soba buckwheat flour noodles , one thing they share in common is the practice of slurping noodles. During the Edo Period, many people ate noodles at outdoor stalls. Historically, the noodles were eaten as quickly as possible, and then they would drink the soup, resulting in loud slurping. One can even argue that slurping noodles is a part of Japanese table manners , as slurping is correlated with eating noodles. Plus, to fully enjoy the noodle experience, people should not be bothered by the expected mess that slurping may cause so that they can fully focus on enjoying the taste. On top of this, some people consider slurping to compliment the cook about how good the noodles are. Another reason is that ramen must be eaten hot.
