Moving from Italy to New York gave me the chance to become familiar with other foods and cultures and I soon fell in love with many of them. Among those cultures there is one that stands out in my memory because of the beauty of my encounter with it and that is Mexican culture and food. This is where Puya-Tacos de Puebla comes from. Puya is the name of a famous Mexican hot pepper. Used widely in Mexico, it is difficult to find elsewhere, probably due to its substitution by other more common hot peppers such as the guajillo. I have traveled widely in Mexico to deepen my understanding of traditional Mexican cuisine and to discover the roots of the authentic Mexican tacos. I found these roots in Puebla and I have brought them from Puebla to our taqueria. From Puebla come the colors, the basic ingredients, the flavors, the inspiration, our smiles and the gift of hospitality. From there, most importantly, comes our chef, Romulo Barrientos. Just as I have done, Romulo also came to the United States and here he has developed his career working in prestigious New York restaurants, side-by-side with the best chefs of the city.
